Smoked Duck & White Bean Ragout

 Serves 4

Ingredients:
1 16 ounce can white beans, drained and rinsed
1 onion, diced
1 carrot, peeled, diced
1 rib celery, sliced
6 cloves garlic, minced or crushed
1 smoked duck breast, sliced                                                                                                               

4 slices bacon, sliced
1 teaspoon olive oil
1 16 ounce can diced tomato
1/4 cup fresh parsley, minced
1 tablespoon fresh sage, minced

½ tablespoon fresh rosemary, minced
½ cup red wine
12 ounces frozen spinach, frozen or thawed – your choice
1/2 tsp balsamic vinegar
salt, hot sauce to taste


Directions:
Drain and rinse the beans. Place the olive oil and bacon in a sauté pan and cook until crisp. Add the garlic, onion, carrot, celery, and cook until translucent. Add herbs and cook to “bloom” the aroma. Add beans and canned tomato. Simmer to reduce the acid and marry the flavors. Add wine and reduce to half way. Add duck, spinach & vinegar. Simmer in covered pot on low heat until the dish is at preferred consistency.
